For the Masala Base
Ghee – 3 tbsp
Oil – 2 tbsp
Onions – 3 large (thinly sliced)
Tomatoes – 2 medium (chopped)
Fresh mint leaves – ½ cup
Fresh coriander leaves – ½ cup
Biryani masala – 2 tsp
Green chilies – 2 (slit)
For Saffron Milk
Warm milk – ¼ cup
Saffron strands – 8–10
🍳 Step-by-Step Cooking Instructions
Step 1 – Clean and Prepare the Squid
Wash the squid thoroughly and cut into medium-sized rings.
Rub turmeric and salt, then rinse again to remove any fishy smell.
Step 2 – Marinate the Squid
In a bowl, combine yogurt, ginger-garlic paste, lemon juice, chili powder, turmeric, coriander powder, cumin powder, garam masala, and salt.

Drizzle 1 tbsp ghee on top.

Cover with a tight lid or seal with wheat dough.
Cook on medium flame for 5 minutes, then low flame for 15 minutes.
Let it rest for 10 minutes before serving.

Gently fluff up the biryani without breaking the rice grains.
