Onion – 2 large (thinly sliced)
Tomato – 2 medium (chopped)
Ginger-garlic paste – 1½ tbsp
Red chili powder – 1 tsp
Turmeric powder – ¼ tsp
Coriander powder – 1 tsp
Cumin powder – ½ tsp
Biryani masala – 1½ tsp
Salt – 1 tsp
Yogurt – ½ cup (thick)
Fresh coriander – ¼ cup (chopped)
Fresh mint – ¼ cup (chopped)
For Saffron Milk
Warm milk – ¼ cup
Saffron strands – 8–10
🍳 Step-by-Step Cooking Instructions
Step 1 – Cook the Rice
Wash and soak basmati rice for 20 minutes.
In a large pot, boil water with bay leaves, cinnamon, cloves, cardamom, star anise, and salt.
Add soaked rice and cook until 70% done. Drain and keep aside.
Step 2 – Make the Masala Omelette
Crack eggs into a bowl, add onion, tomato, green chilies, coriander, mint, red chili powder, turmeric, garam masala, and salt. Whisk well.

Cover the handi with a tight lid or seal with wheat dough.
Cook on medium heat for 5 minutes, then low heat for 15 minutes.
Switch off the heat and let it rest for 10 minutes before serving.
