Ghee – 4 tbsp
Oil – 3 tbsp
Onions – 3 large (thinly sliced)
Tomatoes – 2 medium (chopped)
Green chilies – 4 (slit)
Fresh mint leaves – 1 cup (chopped)
Fresh coriander leaves – 1 cup (chopped)
Cashews – 10 (soaked & halved)
Almonds – 10 (blanched & sliced)
Raisins – 2 tbsp
Yogurt – ½ cup
Whole Spices
Bay leaves – 2
Cloves – 5
Cardamom pods – 5
Cinnamon stick – 2-inch
Star anise – 1
Black peppercorns – 1 tsp
Mace – 1 strand
🍳 Step-by-Step Cooking Instructions
Step 1 – Marinate the Chicken
In a large bowl, combine chicken, yogurt, ginger-garlic paste, red chili powder, fennel powder, turmeric, coriander powder, garam masala, and salt.
Mix well, cover, and refrigerate for 1–2 hours (overnight for better flavor).
Step 2 – Prepare the Rice
Wash basmati rice until the water runs clear, then soak for 30 minutes.
In a large pot, boil water with salt, add rice, and cook until 70% done.
Drain and set aside.

Seal the pot with a tight-fitting lid or wheat dough.
Place on low flame for 20–25 minutes.
Turn off heat and let it rest for 10 minutes before serving.
