Cardamom – 4 pods
Cinnamon – 2-inch stick
Star anise – 1
Fennel seeds – 1 tsp
Black peppercorns – 10
For the Rice
Short-grain sona masoori rice – 4 cups
Water – as required
Salt – 1 tbsp

Step 1 – Marinate the Meat
In a large bowl, mix mutton with ginger-garlic paste, red chili powder, turmeric, salt, lemon juice, and yogurt.
Cover and let it marinate for at least 1 hour (overnight for best results).
Step 2 – Prepare the Rice
Wash the sona masoori rice 2–3 times and soak for 30 minutes.
Boil water with salt and cook rice until 70% done.
Drain and set aside.
Step 3 – Make the Masala
Heat oil in a large biryani handi.
Add bay leaves, cloves, cardamom, cinnamon, star anise, fennel seeds, and peppercorns.
Sauté for 30 seconds until fragrant.
Add sliced onions and fry until golden brown.
Mix in green chilies and chopped tomatoes; cook until tomatoes soften.
Add the marinated mutton and cook on medium heat until the meat is tender and oil begins to separate. (For beef, cook longer; for chicken, reduce cooking time.)
Step 4 – Layer the Biryani
Spread half of the rice over the cooked mutton masala.
Sprinkle mint and coriander leaves.
Add the remaining rice and top with the rest of the herbs.
Step 5 – Dum Cooking
Cover the handi with a tight lid or seal with dough.
Cook on very low heat for 25–30 minutes to allow the flavors to infuse.
Switch off the flame and let it rest for 10 minutes before serving.
