For the Eggs & Curry

  • Eggs – 6 boiled

  • Ginger-garlic paste – 2 tbsp

  • Green chilies – 2 (slit)

  • Fresh coriander leaves – ½ cup (chopped)

  • Fresh mint leaves – ½ cup (chopped)

For the Curry Masala

  • Red chili powder – 1½ tsp

  • Turmeric powder – ½ tsp

  • Coriander powder – 1 tsp

  • Cumin powder – 1 tsp

  • Garam masala – ½ tsp

  • Biryani masala – 2 tsp

  • Salt – 1½ tsp

  • Yogurt – ½ cup (thick)

For Saffron Milk

  • Warm milk – ¼ cup

  • Saffron strands – 8–10

Step 1 – Prepare the Eggs

  1. Boil 6 eggs for 10–12 minutes.

  2. Peel and make small slits in each egg.

  3. Rub with a pinch of turmeric and salt.

  4. Lightly fry in 1 tsp oil until golden. Set aside.


Step 2 – Cook the Rice

  1. Wash and soak basmati rice for 20 minutes.

  2. In a large pot, boil water with bay leaves, cardamom, cinnamon, cloves, star anise, and salt.

  1. Seal the pot with a tight lid or wheat dough.

  3. Turn off heat and let it rest for 10 minutes before serving.


Step 6 – Serve

  • Fluff gently with a fork to avoid breaking eggs.

  • Serve hot with onion raita, papad, and salad.
