Cloves – 3
Cinnamon stick – 1-inch
For Biryani Masala
Ghee – 4 tbsp
Oil – 3 tbsp
Onions – 3 large (thinly sliced)
Tomatoes – 2 medium (chopped)
Green chilies – 4 (slit)
Fresh mint leaves – ½ cup (chopped)
Fresh coriander leaves – ½ cup (chopped)
Saffron – a pinch (soaked in ¼ cup warm milk)
Fried onions (birista) – ½ cup

Bay leaves – 2
Black cardamom – 2
Cloves – 4
Green cardamom – 4
Cinnamon stick – 2-inch
Star anise – 1
Mace – 1 strand
Black peppercorns – 1 tsp
🍳 Step-by-Step Cooking Instructions
Step 1 – Marinate the Chicken
In a large mixing bowl, combine chicken, yogurt, ginger-garlic paste, red chili powder, coriander powder, turmeric, garam masala, salt, and lemon juice.
Mix well, cover, and refrigerate for at least 2 hours (overnight marination enhances the flavor).
Step 2 – Cook the Rice
Wash basmati rice until the water runs clear. Soak for 30 minutes.
In a large pot, boil water with salt, bay leaf, cardamom, cloves, and cinnamon.

Spread half the cooked rice on top, drizzle with saffron milk, fried onions, mint, and coriander.
Repeat with the remaining chicken and rice layers, finishing with saffron milk and a little ghee.
Step 5 – Dum Cooking
Cover the pot with a tight-fitting lid or seal with wheat dough.
Cook on very low heat for 20–25 minutes.
Switch off the heat and rest for 10 minutes before opening.
Fluff gently and serve hot.
