For Rice

  • Basmati rice – 4 cups

  • Water – as required

  • Salt – 1 tbsp

  • Bay leaf – 1

  • Green cardamom – 3 pods

  • Cloves – 3

  • Cinnamon stick – 1-inch

For Biryani Masala

  • Ghee – 4 tbsp

  • Oil – 3 tbsp

  • Onions – 3 large (thinly sliced)

  • Tomatoes – 2 medium (chopped)

  • Green chilies – 4 (slit)

  • Fresh mint leaves – ½ cup (chopped)

  • Fresh coriander leaves – ½ cup (chopped)

  • Saffron – a pinch (soaked in ¼ cup warm milk)

  • Fried onions (birista) – ½ cup

Whole Spices for Masala

  • Bay leaves – 2

  • Black cardamom – 2

  • Cloves – 4

  • Green cardamom – 4

  • Cinnamon stick – 2-inch

  • Star anise – 1

  • Mace – 1 strand

  • Black peppercorns – 1 tsp


🍳 Step-by-Step Cooking Instructions

Step 1 – Marinate the Chicken

  1. In a large mixing bowl, combine chicken, yogurt, ginger-garlic paste, red chili powder, coriander powder, turmeric, garam masala, salt, and lemon juice.

  2. Mix well, cover, and refrigerate for at least 2 hours (overnight marination enhances the flavor).


Step 2 – Cook the Rice

  1. Wash basmati rice until the water runs clear. Soak for 30 minutes.

  2. In a large pot, boil water with salt, bay leaf, cardamom, cloves, and cinnamon.

  3. Add rice and cook until 70% done. Drain and set aside.


Step 3 – Prepare the Masala

  1. Heat ghee and oil in a heavy-bottomed pan.

  2. Add bay leaves, black cardamom, cloves, cinnamon, star anise, mace, and peppercorns. Sauté for 30 seconds.

  3. Add sliced onions and fry until golden brown.

  4. Add green chilies and chopped tomatoes, cooking until soft.

  5. Add marinated chicken, cooking on medium heat until the meat is 80% cooked.

  6. Stir in half the mint and coriander leaves.


Step 4 – Layer the Delhi Biryani

  1. In a large biryani pot, layer half the chicken masala at the bottom.

  2. Spread half the cooked rice on top, drizzle with saffron milk, fried onions, mint, and coriander.

  3. Repeat with the remaining chicken and rice layers, finishing with saffron milk and a little ghee.


Step 5 – Dum Cooking

  1. Cover the pot with a tight-fitting lid or seal with wheat dough.

  2. Cook on very low heat for 20–25 minutes.

  3. Switch off the heat and rest for 10 minutes before opening.

  4. Fluff gently and serve hot.
