Bhopali Biryani Recipe – Royal Flavors of Madhya Pradesh

Bhopali Biryani is a lesser-known gem of Indian cuisine, originating from the royal kitchens of Bhopal, Madhya Pradesh. Unlike the heavy masala-based biryanis of Hyderabad or Kolkata, Bhopali Chicken Biryani is light, aromatic, and influenced by Mughlai and Nawabi flavors. This royal dish is usually prepared with mutton or chicken, slow-cooked with fragrant spices, and layered with long-grain basmati rice.

🛒 Ingredients for Bhopali Chicken Biryani (Serves 6)

For Marination

  • Chicken (bone-in) – 1 kg (or mutton for Bhopali mutton biryani)

  • Yogurt – 1 cup

  • Ginger-garlic paste – 2 tbsp

  • Green chili paste – 1 tsp

  • Turmeric powder – ½ tsp

  • Red chili powder – 1 tsp

  • Salt – 1 tsp

  • Lemon juice – 1 tbsp

For Rice

  • Basmati rice – 4 cups

  • Water – as required

  • Salt – 1 tbsp

  • Bay leaf – 1

  • Green cardamom – 3

  • Cloves – 4

  • Cinnamon stick – 1-inch

  • Star anise – 1

For Biryani Masala

  • Ghee – 4 tbsp

  • Oil – 3 tbsp

  • Onions – 3 large (thinly sliced)

  • Tomatoes – 2 medium (chopped)

  • Green chilies – 4 (slit)

  • Fresh mint leaves – ½ cup (chopped)

  • Fresh coriander leaves – ½ cup (chopped)

  • Garam masala – 1 tsp

  • Black pepper powder – ½ tsp

  • Saffron strands – a pinch (soaked in ¼ cup warm milk)

  • Rose water – 1 tsp (optional, for royal aroma)

For Garnish

  • Fried onions – ½ cup

  • Cashews – ¼ cup (fried in ghee)

  • Raisins – 2 tbsp (fried in ghee)


🍳 Step-by-Step Cooking Instructions

Step 1 – Marinate the Chicken

  1. In a large bowl, mix chicken, yogurt, ginger-garlic paste, green chili paste, turmeric powder, red chili powder, salt, and lemon juice.

  2. Cover and refrigerate for 1–2 hours to allow the spices to penetrate deeply.


Step 2 – Cook the Rice

  1. Wash the basmati rice until water runs clear and soak for 30 minutes.

  2. Boil water with salt, bay leaf, cardamom, cloves, cinnamon, and star anise.

  3. Add the soaked rice and cook until 70% done. Drain and keep aside.


Step 3 – Prepare the Biryani Masala

  1. Heat ghee and oil in a large heavy-bottomed pot.

  2. Fry the sliced onions until golden brown; remove half for garnish.

  3. Add tomatoes and green chilies, cooking until tomatoes turn soft.

  4. Stir in mint and coriander leaves.

  5. Add marinated chicken and cook on medium heat until 80% cooked.

  6. Sprinkle garam masala and black pepper powder, mixing well.


Step 4 – Layer the Bhopali Biryani

  1. Remove half the chicken masala from the pot and set aside.

  2. Spread half the cooked rice over the chicken in the pot.

  3. Drizzle saffron milk, rose water, fried onions, cashews, and raisins.

  4. Add the remaining chicken masala and top with the rest of the rice.

  5. Repeat the garnish layer with saffron milk and fried dry fruits.


Step 5 – Dum Cooking

  1. Seal the pot with a tight lid or wheat dough to trap the steam.

  2. Place on low heat for 20–25 minutes.

  3. Switch off the flame and let it rest for 10 minutes before serving.

  • Serve Bhopali Chicken Biryani hot with boondi raita, kachumber salad, and papad.

  • A side of mutton korma or mirchi ka salan pairs beautifully with it.
