Basmati rice – 4 cups
Water – as required
Salt – 1 tbsp
Bay leaf – 1
Green cardamom – 3
Cloves – 4
Cinnamon stick – 1-inch
Star anise – 1
For Biryani Masala
Ghee – 4 tbsp
Oil – 3 tbsp
Onions – 3 large (thinly sliced)
Tomatoes – 2 medium (chopped)
Green chilies – 4 (slit)
Fresh mint leaves – ½ cup (chopped)
Fresh coriander leaves – ½ cup (chopped)
Garam masala – 1 tsp
Black pepper powder – ½ tsp
Saffron strands – a pinch (soaked in ¼ cup warm milk)
Rose water – 1 tsp (optional, for royal aroma)
For Garnish
Fried onions – ½ cup
Cashews – ¼ cup (fried in ghee)
Raisins – 2 tbsp (fried in ghee)
🍳 Step-by-Step Cooking Instructions
Step 1 – Marinate the Chicken
In a large bowl, mix chicken, yogurt, ginger-garlic paste, green chili paste, turmeric powder, red chili powder, salt, and lemon juice.
Cover and refrigerate for 1–2 hours to allow the spices to penetrate deeply.
Step 2 – Cook the Rice
Wash the basmati rice until water runs clear and soak for 30 minutes.
Boil water with salt, bay leaf, cardamom, cloves, cinnamon, and star anise.
Add the soaked rice and cook until 70% done. Drain and keep aside.
Step 3 – Prepare the Biryani Masala
Heat ghee and oil in a large heavy-bottomed pot.
Fry the sliced onions until golden brown; remove half for garnish.
Add tomatoes and green chilies, cooking until tomatoes turn soft.
Stir in mint and coriander leaves.
Add marinated chicken and cook on medium heat until 80% cooked.
Sprinkle garam masala and black pepper powder, mixing well.
Step 4 – Layer the Bhopali Biryani
Remove half the chicken masala from the pot and set aside.
Spread half the cooked rice over the chicken in the pot.
Drizzle saffron milk, rose water, fried onions, cashews, and raisins.
Add the remaining chicken masala and top with the rest of the rice.
Repeat the garnish layer with saffron milk and fried dry fruits.
Step 5 – Dum Cooking
Seal the pot with a tight lid or wheat dough to trap the steam.
Place on low heat for 20–25 minutes.
Switch off the flame and let it rest for 10 minutes before serving.
