  • Fresh coriander leaves – 1 cup (chopped)

  • Yogurt – ½ cup

Whole Spices

  • Bay leaves – 2

  • Cloves – 6

  • Cardamom – 5 pods

  • Cinnamon – 2-inch stick

  • Star anise – 1

  • Mace – 1 strand

  • Black stone flower (kalpasi) – 1 tsp

For the Rice

  • Seeraga samba rice – 4 cups

  • Water – as required

  • Salt – 1 tbsp

Step 1 – Marinate the Mutton

  1. In a bowl, combine mutton, yogurt, ginger-garlic paste, turmeric, red chili powder, coriander powder, lemon juice, and salt.

  2. Mix well, cover, and let it marinate for at least 1–2 hours for best flavor.


Step 2 – Cook the Rice

  1. Wash the seeraga samba rice until water runs clear, then soak for 20 minutes.

  2. In a pot, boil water with salt, add the soaked rice, and cook until 70% done.

  3. Drain and keep aside.

  1. Heat oil and ghee in a heavy-bottomed biryani pot.
